Tofu & Veggie Stir-fry with Black Rice

Ingredients

●     Firm tofu (cubed): 100g

●     Cooked black rice: 150g

●     Broccoli (chopped): 60g

●     Red cabbage (shredded): 50g

●     Garlic: 1 clove, minced

●     Ginger: 1 tsp, minced

●     Sesame seeds: 1 tsp

●     Sesame oil (for stir-frying): 1 tsp

●     Soy sauce or tamari (low sodium): 1 tbsp

Instructions

  1. Heat sesame oil in a wok. Sauté garlic and ginger until fragrant.
  2. Add tofu cubes and cook until golden.
  3. Toss in broccoli and red cabbage, stir-fry for 2–3 mins.
  4. Add soy sauce and cook until veggies are tender-crisp.
  5. Serve with warm black rice, sprinkled with sesame seeds.

Sauté garlic, ginger, add chopped veg and tofucubes, stir-fry with tamari sauce. Serve with black rice.
