Malabar Spinach & Clam Soup

Ingredients

●     200 g Fresh Clams (nghêu), cleaned

●     1 cup Malabar Spinach (mồng tơi), roughly chopped

●     1 slice Ginger

●     500 ml Water

●     ½ tsp Fish Sauce

●     Salt & pepper to taste

Instructions

  1. Steam clams until they open, reserve the juice, remove most shells.
  2. In a pot, bring reserved clam juice and water to a boil with ginger.
  3. Add clams and season with fish sauce, salt, and pepper.
  4. Stir in malabar spinach, cook just until wilted, then serve.
