Lotus Root & Red Date Dessert Soup

Ingredients

●     50 g Lotus Root, sliced thin

●     30 g Fresh Lotus Seeds (or dried,soaked 4 hrs)

●     3 pcs Red Dates (Jujube)

●     1 tbsp Goji Berries

●     500 ml Water

●     ¼–½ monk fruit, lightly crushed

1 knot PandanLeaf(optional, for aroma)

Instructions

  1. Rinse all ingredients. Soak dried red dates and goji berries separately in warm water for 10 minutes.
  2. In a pot, combine water and crushed monk fruit. Bring to a gentle boil and simmer for 10 minutes to extract the sweetness.
  3. Strain out monk fruit (or keep it if you prefer a stronger herbal taste).
  4. Add lotus root and lotus seeds. Simmer gently for 20–25 minutes until tender.
  5. Add red dates and pandan leaf. Simmer for another 10 minutes.
  6. Stir in goji berries, cook for 5 more minutes, then remove from heat.
  7. Serve warm or chilled.
