Kimchi & Edamame Fried Brown Jasmine Rice

Ingredients

●     Cooked brown jasmine rice: 150g

●     Kimchi (drained): 60g

●     Edamame (shelled): 70g

●     Carrot (grated or diced): 40g

●     Onion (chopped): 30g

●     Garlic: 1 clove, minced

●     Egg: 1 whole (optional forovo-vegetarian; omit for vegan)

●     Sesame seeds: 1 teaspoon

●     Sesame oil (for cooking): 1teaspoon

Instructions

  1. Heat sesame oil in a pan and sauté garlic and onion until fragrant.
  2. Add  carrot and edamame, cook for 2–3 minutes.
  3. Push veggies aside, scramble egg in the same pan (if using).
    Stir in cooked brown jasmine rice and chopped kimchi.
    Cook on high heat for 2–3 minutes until slightly crispy.
  4. Top with sesame seeds before serving.

Stir-fryonion, garlic, shredded carrots, edamame, and brown jasmine rice. Add scrambledegg and finish with chopped kimchi and a drizzle of sesame oil.
