Herbal Chicken Soup with Galangal & Lemongrass

Ingredients

●     Skinless roasted chicken (shredded):100g

●     Galangal (sliced): 10g

●     Lemongrass (smashed): 1 stalk (approx.15g)

●     Coriander leaves & stems: 5g

●     Celery (sliced): 30g

●     Garlic: 1 clove, minced

●     Ginger (sliced): 5g

●     Water or chicken broth (low-sodium):400ml

●     Salt & pepper (to taste)

Instructions

  1. In a pot, add water or broth, galangal, lemongrass, garlic, and ginger. Simmer for 10–15 mins.
        Add celery and cooked chicken. Simmer for another 5 mins.
  2. Season to taste with salt and pepper.
  3. Top with coriander before serving.

Simmer chicken with galangal, lemongrass,celery, garlic, and ginger for 45 mins. Garnish with coriander.
