Chive, Silken Tofu & Straw Mushroom Soupy

This light soup supports immunity andmetabolism through chives, rich in allicin and quercetin, and mushrooms, knownfor beta-glucans that modulate immune function. Silken tofu adds plant-basedprotein and calcium while keeping the dish gentle and easy to digest.

Ingredients

●     1 block (100 g) Silken Tofu, cut into cubes

●     ½ cup Straw Mushrooms, halved

●     1 handful (20 g) Fresh Chives, cut into 4–5 cm segments

●     500 ml Water or Light Vegetable Broth

●     ½ tsp Soy Sauce (optional)

●     ¼ tsp Salt, or to taste

●     1 tsp Oil (optional for flavor)

Pinch of WhitePepper (optional)

Instructions

  1. Bring broth or water to a gentle boil.
  2. Add straw mushrooms and cook for 3–4 minutes.
  3. Gently slide in silken tofu, season with salt and optional soy sauce. Simmer 2–3 minutes.
  4. Add chopped chives, turn off heat immediately to preserve color and nutrients.

Sprinkle with white pepper if desired, and servewarm.
